I am on a strawberry roll lately my friends! And… you’ve got to try this yogurt bark recipe! I LOVE the crunch of the granola!
The granola recipe is homemade too. You can use my recipe or find a quality, low-sugar granola to keep it a little on the ‘healthier’ side.

It’s getting warmer here in Central New York so the freezer treats are being stocked, but I want to keep the very sugary treats out of my freezer. Those are reserved for the occasional evening drive to the ice cream parlor.
If you know me, you know I am a huge fan of moderation in eating. I am a foodie and I want to enjoy some indulgences now and then. To balance it out, I eat healthy 80-90% of the time and let myself eat what I want the other 10-20%.
This recipe hits some important nutritional marks. The Greek yogurt is an excellent source of protein. The strawberries will give you a dose of Vitamin C and beautiful antioxidants. Raw honey is great for your immune system and the granola… think fiber, healthy fats and more protein!
Now, to the star of the issue (doesn’t it look good)…
Strawberry Granola Yogurt Bark
Ingredients:
One large container of plain Greek yogurt (32 oz)
2 cups of sliced strawberries, or fruit of choice
1 1/2 cups granola
1/4 cup honey (preferably organic raw honey)
Instructions:
Mix the yogurt and honey in a large bowl with a spoon or whisk. Taste test and add more honey as needed.
Add fruit and gently fold in.
Pour mixture into a rimmed cookie sheet lined with parchment paper.
Add granola on top of mixture.
Freeze for 3-4 hours until firm, then break into a dozen or more pieces. Store in freezer and enjoy!
