I would say that strawberries, almonds, and oats are like the holy trinity of healthy eats!
Soooooβ¦ one day I was contemplating a healthy dessert idea and what to do with my organic pint of strawberries from Whole Foods before they went bad. And this lilβ recipe was born. BTW - I am finding that Whole Foods has the best price on stawbs this time of year!
Let's break the nutrition down. My favorite part!

First up, strawberries. These juicy little gems are bursting with health benefits! Theyβre packed with antioxidants, especially vitamin C. This means theyβre not only boosting your immune system, but also fighting off free radicals. They are low in calories and high in fiber, which helps keep your digestion on point and your waistline happy. Did you also know that they contain manganese and folate, essential for your metabolism and cell function?
On to almond talk. Almonds are full of healthy monounsaturated fats that can help lower bad cholesterol levels and keep your heart in better shape. Plus, almonds are a solid source of plant-based protein, perfect for muscle repair and growth. Grab a handful of nuts after a strength training sesh. Ohhhh, and the vitamin E in almonds are a game-changer for your skin, protecting it from oxidative damage and keeping it radiant. An ode to the magnesium in almonds, which is helpful for controlling blood sugar, regulating blood pressure, and can help with sleep too. Magnesium is literally in my sleep time toolbox.
What about the oats? These humble grains are fiber powerhouses, especially with their beta-glucan content, which helps lower cholesterol and boost heart health. Oats are super filling, which makes them a top choice for satiety. PLUS you get a mix of essential vitamins and minerals like manganese, phosphorus, magnesium, iron, and zinc. Strawberry Almond Crunch Air Fryer Oat Bake
Ingredients:
1/2 cup rolled oats
1 scoop vanilla protein powder
1 teaspoon chia seedsΒ
1/4 cup unsweetened almond milk
1/4 cup plain Greek yogurt
1/2 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
Pinch of salt
1/4 cup sliced strawberries
Crunchy Topping (this can be doubled for extra crunchy topping)
1 tablespoon chopped almonds
1 teaspoon rolled oats
1/2 teaspoon pure maple syrup
1 teaspoon gluten-free flour
Instructions:
Preheat your air fryer to 360 degrees. Grease a small oven-safe dish, or medium size ramekin with olive oil.
In a medium bowl, combine the rolled oats, protein powder, chia seeds, almond milk, Greek yogurt, vanilla extract, cinnamon, and salt. Fold in the sliced strawberries.
In a separate small bowl, mix the chopped almonds, oats, maple syrup, and gluten-free flour.
Pour the oatmeal mixture into the prepared dish.Β
Sprinkle the crunchy topping evenly over the top.
Bake for 8-10 minutes in the air fryer or until the oatmeal is set and the topping is golden brown.
Let cool slightly before serving. Add some more Greek yogurt and fresh strawberries on top.Β
