Kimchi Cottage Cheese [greatest] Scrambled Eggs on Sourdough

Are you getting egg fatigue?
I don’t know if that’s really a thing (just made it up)! I do know that I can get bored of the same old scrambled eggs, so lately, I’ve been adding ‘extras’ to my eggs.
This particular eggy breakfast blew my mind! It is so delicious and so nutritious!
One thing I would do for the next round of this recipe is to chop the kimchi into small pieces. I used it right out of the jar and the cabbage pieces were a little too large for scrambled eggs (for me anyway).
This breakfast not only tastes amazing, but also fuels your body, supports a happy gut, and helps you hit your protein goals!
Happy Gut Protein Scrambled Eggs on Sourdough
Ingredients (and nutritional deets) 👇 this serves 2
4 eggs 🥚 (fantastic source of high-quality protein and rich in B vitamins, essential for energy production - hello energy)
1/4 cup of kimchi, chopped if you prefer smaller pieces (packed with probiotics to support your gut health and boost your immune system)
1/8 cup cottage cheese (great for adding creaminess and an extra protein punch, plus it's rich in calcium for strong bones)
1 tablespoon parmesan (adds depth of flavor and a good dose of calcium)
Salt and pepper to taste
2 slices of sourdough, toasted (a satisfying crunch and prebiotics, which feed your good gut bacteria)
1/2 avocado, mashed (full of heart-healthy monounsaturated fats and fiber to keep you full longer)
Method:
In a bowl, whisk together eggs, kimchi, cottage cheese, parmesan, salt, and pepper. Feel free to get creative with seasonings and herbs. *tip - strain the kimchi and cottage cheese of liquid or the eggs will be too runny.
Pour the mixture into a preheated, non-stick skillet and cook over medium heat, stirring gently until the eggs are set but still creamy.
Toast your sourdough to perfection and smash a generous layer of avocado on top.
Serve the scrambled eggs over the avocado toast. Top off with some fresh sprouts for plant-based fiber.
The combination of probiotics, protein, healthy fats, and fiber will support your digestive system and give you sustainable energy to get you through the day.
