This pumpkin breakfast cookie can also serve as a dessert after lunch or dinner. And, it can be made any ole’ time of year, not just in the fall… why would we limit ourselves to only eating pumpkin seasonally when we can get a can of pumpkin at any time?
My air fryer is one of my top 3 favorite kitchen appliances. It is so versatile. Did you know you can defrost your salmon in the air fryer, and then cook it in the air fryer? Yes, yes, yes!!! That is one of my top air fryer hacks, but we’re not here to talk about salmon (even though it is so good and healthy).
Back to our main subject today: pumpkin oh pumpkin.
Did you know that pumpkin is loaded with a variety of nutrients, including fiber, vitamins, minerals, and antioxidants (especially high in Vitamin A)? It is a powerhouse um…. gourd, squash, fruit? It is all of the above!
To bring the magic all together in this single (well, I share it) serve cookie we use oats, oat flour, coconut oil (can sub extra virgin olive oil), peanut butter (can sub almond or other nut butter), a tiny bit of pure maple syrup, and of course dark chocolate chips! The dark chocolate chips tie this all together, and bring a tad more sweetness.
