Dark Chocolate Chip Oatmeal Microwave Mug Cake (for breakfast) 🍪
This recipe serves 1 and takes less than 10 minutes to make.
Ingredients:
1 tablespoon flaxseed meal
3 tablespoons warm water
1 egg
1/2 tablespoon avocado oil
1/2 tablespoon almond butter
1 tablespoon pure maple syrup (optional)
1/4 teaspoon vanilla extract
3 tablespoons rolled oats
3 tablespoons oat flour
1/2 scoop vanilla protein powder
1 teaspoon baking powder
1 tablespoon dark chocolate chips
Method:
Prep the flax egg: in a small bowl, combine the flaxseed meal and warm water. Stir well and let it sit for about 5 minutes until it thickens and forms a gel-like consistency.
In a microwave-safe mug, whisk the egg until well beaten. Add the avocado oil, almond butter, maple syrup (if using), and vanilla extract. Mix until smooth and well combined.
Add the rolled oats, oat flour, protein powder, and baking powder to the mug. Stir until the mixture is thoroughly combined and no lumps remain.
Stir in the prepared flax egg until evenly distributed throughout the batter.
Gently fold in the dark chocolate chips.
Cook the mug cake in the microwave on high for 60-90 seconds. Start checking at 60 seconds and continue in 20-second intervals until the cake is set and cooked through.
Allow the mug cake to cool slightly before thoroughly enjoying!
